Ricotta Gnudi

A super easy, super delicious and very impressive dinner.

  • 1 cup ricotta
  • 1 garlic clove minced
  • 1 egg yolk
  • 3/4 cup finely grated parmesan
  • 1/2 cup flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 pinch nutmeg
  1. In a large pot bring water to boil with a generous amount of salt.

  2. In a medium sized bowl add all the ingredients and mix together.

  3. Sprinkle flour on a baking sheet. Use a cookie scoop to scoop the gnudi and place on the baking sheet. Roll the scooped gnudi in your hands and place back on the tray.

  4. Once the water is boiled, add the gnudi in batches and cook for 3-4 minutes.

  5. Toss the gnudi in a tomato sauce and serve with freshly grate parmesan.
