Spring you long awaited beauty, welcome!
Spring is a tease in this neck of the woods. Warm like early summer one day and snow falling the next.
It is in these transitional weeks that I like to start flipping through my cookbooks and get inspired about what I'm going to try this season. I research what produce is in season in this area and I ponder what I want my spring pantry to be stocked with.
I've been thinking about pastels, colorful sprinkles, fresh herbs, salads, pistachios, strawberries, honey, white chocolate, and anything that can be made to look like a bunny's tush.
Spring is a carrot cake, warmly spiced and yet lightened by bright cream cheese frosting. It walks the overcast grey line between sunshine and snow.
I'm looking forward to making the most of this short season.
What do you think of when you think of the flavours of Spring?
