Thank God for the humble flax seed and its baking magic.
I'm a little behind on my Christmas baking this year, but that is just how it goes when you spend your time running after littles, doing laundry and making another dinner those aforementioned littles won't touch. But they do magnify the magic of Christmastime so it is well worth it.
I started off with gingersnaps as they are my hubby-roo's fave cookies, and I have grown to love their spicy chew with a cup of tea. I like to make a batch of dough and keep it in the fridge for slicing and rolling, or preroll them and freeze* them for easy baking as I am a FIRM believer in fresh cookies.
Ingredients
- 3/4 cup vegan butter (softened/room temp)- I use Becel Plant Based Sticks
- 1 cup sugar, plus more for rolling
- 1 flax egg (1 tbsp ground flax seed + 2.5 tbsp water)
- 1/4 cup molasses
- 1 tbsp g. ginger
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp baking soda
- 2 cups flour
Instructions
- Preheat oven to 350
- Mix together the flax seed and water to make a flax egg, set aside.
- In a stand mixer cream together butter and sugar using the paddle attachment.
- While that is creaming, in a separate bowl whisk together the dry ingredients (g.ginger, salt, cinnamon, b.soda and flour).
- Once the butter and sugar are light and fluffy, scrape down the bowl and add the flax egg and molasses.
- Slowly add the dry ingredients to the mixer while it is running. Do not over mix.
- Use a cookie scoop to scoop the dough, roll the scooped dough and roll in sugar. Place on a baking sheet with parchment paper or silicone baking sheet.
- Bake in preheated oven for 9-12 minutes. (9-10 for softer cookies and 10-12 for cookies with a bit more crunch.
*Note: If you don't need a vegan cookie, use normal butter and replace the flax egg with one egg if you prefer. If you do decide to freeze the dough, do so before rolling it in sugar. When wanting to bake allow to thaw while the oven is preheating and roll in sugar. The sugar will have a hard time sticking if the dough is still frozen solid, so you may need to wait a tad bit longer, but the fresh cookies will be your reward.
