It is getting pretty cold over here. One of my favourite bevvies for a cold day, other than my constant chugging of orange pekoe with just the right splash of milk, is white hot chocolate.
White hot chocolate is warm, cozy, rich, decadent and reminds me of winter. I've been experimenting with different plant based milks recently. I figured if I started off with a recipe I know I love, and replace the milk for a plant based alternative it will be easier to see if it is the milk or the recipe (in Psychology and science they call this controlling the variables.. or something like that).
I've noticed that cashew milk has gotten quite popular and I've enjoyed its creamy texture, so I thought it would be a perfect pairing to the white hot chocolate. I was NOT disappointed. Of course using high quality chocolate makes all the difference. I prefer using Lindt chocolate.
I plan on continuing to try out different milks and maybe even eventually finding a vegan white chocolate, to hopefully one day create a recipe that is completely vegan and just as DELISH as my fave. But for now I'm happy just adding new plant based options, one replacement at a time.
Ingredients (per 1 serving)
- 1/2 white chocolate bar, roughly chopped
- 1 1/4 cup of milk (approx.)
- 1/2 tsp vanilla (a cap full)
- pinch of salt
- pinch of cinnamon
Instructions
- Roughly chop 1/2 a white chocolate bar.
- Fill your mug of choice with milk and then transfer to a small pot. Add the rest of the ingredients. Over medium-low simmer the mixture until warm and the chocolate is melted and mixed in. Transfer to your mug and ENJOY.
White Hot Chocolate hits the spot and makes me feel so warm and cozy. Lately I've been managing my dairy sensitivity and haven't found the perfect alternative. This looks like promising..
