Thank the lord for amazing food bloggers. I recently started exploring recipetineats.com for recipes and I have not been disappointed. Every time I look through Nagi’s website I find a week’s worth of dinners (and desserts) I want to try! I can’t wait to work my way through my “to try bucketlist”. Fall has just recently shown its grey, gloomy (and beautiful) face around here and this has inspired all the cozy cooking in my house. This cheesy, creamy dish is perfect for a fall evening.
This new favourite recipe is one of Nagi’s which you can find here, and I will be eternally grateful to her for sharing this gem. This recipe is so easy to make (all in one casserole dish) in less than an hour, everything was cooked great (no mushy broc) AND there is no canned soup in this recipe (win, win, win). I also had barely anything in my fridge, and yet I had everything I needed for this recipe (hallelujah!).
A delicious quick one dish meal.
- 2 chicken breasts diced
- 1 tsp garlic powder
- 1/2 tsp thyme
- 1/2 bouillon cube crumbled
- 1 tbsp olive oil
- 2 ½ cups chicken broth
- 2½ cups milk
- 1½ cups white rice
- 1/4 cup flour
- 2 cloves garlic crushed
- 1 bouillon cube crushed/crumbled
- 2 tbsp butter I used salted
- 1-2 heads broccoli depending on size
- 2 cups cheese grated, I used a mix of cheddar, mozzarella and parmesan
Preheat oven to 350°.
Combine all the chicken ingredients and set aside.
Heat the chicken broth and milk. I heated mine in a pot until simmering.
In a greased 9×13 casserole dish, add the rice, flour, bouillon cube and garlic. Add half of the warmed chicken broth and milk. Stir to combine and get rid of the majority of lumps. Add the rest of the chicken broth and milk. Try to make sure the rice is evenly spread out. Add the chopped broccoli, chicken and butter. Bake uncovered for 40 minutes.
Take casserole out of the oven. Check to make sure rice is just cooked. Add half of the cheese and stir it evenly into the casserole. Top the casserole with the remaining amount of cheese and return to oven for 5 minutes. After the five minutes I turned my broiler on to get everything golden brown and delicious.
