Ricotta Gnudi

I usually try to plan my meals on the weekends so that I can do a grocery shop and try to reduce waste. This works some weeks and doesn’t work other weeks. My Instagram feed is always full of perfect looking meal prep and grocery hulls, but am I the only one out there that when it comes to actually make the planned meal “A” on Monday there isn’t an ounce of my body that actually feels like eating meal “A”. I don’t know why this is such a problem for me…but my cravings can change like the wind. It could be the weather, or a food video that sends my dreaming about something completely different for dinner.

On Monday during my lunch break, I was catching up on the “Mary’s Kitchen Crush” episodes I had missed and all of a sudden I was taken to food dream land. The episode I was watching featured Mary cooking for her husband on their anniversary, and she made this delicious ricotta gnudi. I had never heard of this little pillowy treat, but thank god for Mary’s show for introducing me to this literal gift of cheesy goodness.

Ricotta Gnudi

A super easy, super delicious and very impressive dinner.

Course: dinner, easy, vegetarian
Cuisine: Italian
  • 1 cup ricotta
  • 1 garlic clove minced
  • 1 egg yolk
  • 3/4 cup finely grated parmesan
  • 1/2 cup flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 pinch nutmeg
  1. In a large pot bring water to boil with a generous amount of salt.

  2. In a medium sized bowl add all the ingredients and mix together.

  3. Sprinkle flour on a baking sheet. Use a cookie scoop to scoop the gnudi and place on the baking sheet. Roll the scooped gnudi in your hands and place back on the tray.

  4. Once the water is boiled, add the gnudi in batches and cook for 3-4 minutes.

  5. Toss the gnudi in a tomato sauce and serve with freshly grate parmesan.
