This recipe is a perfect way to celebrate the flavours of Fall. This recipe is the perfect adaption for the pumpkin lovers in your life. These crepes are easy and absolutely delicious. I would recommend filling with simple whipped cream with a sprinkling of cinnamon, or a cinnamon cream cheese frosting. You could also make a pecan caramel sauce. This recipe is adapted from the original recipe here from Chef in Training
I’ve made a giant list on my computer of all the Fall inspired recipes I want to try from my collection of cookbooks. I love experimenting and trying out all these cozy recipes. I think that is why I love the Fall, I love how coziness seems to spread to all the different aspects of the Fall such as fashion, activities and food.
A delicious fall twist on a classic breakfast.
- 2 cups flour
- 4 eggs
- 1 cup milk
- 1 cup water
- 1/2 tsp salt
- 4 tbsp melted butter
- 4 tsp sugar
- 1/2 tsp vanilla
- 1/4-1/2 cup canned pumpkin puree
- 1-2 tsp pumpkin pie spice
I used my blender to combine flour, eggs, milk, water and pumpkin puree. Once combined add salt, butter, sugar, pumpkin pie spice and vanilla.
Heat a large skillet on medium heat. Spray skillet with non-stick spray or some butter.
Pour batter into the skillet and swirl around the skillet until a thin layer covers all of the skillet.
Once some bubbles form on the crepe and flip over with your finger tips or a spatula.
Serve with a generous dollop of whipped cream with a sprinkling of cinnamon or a cream cheese frosting with cinnamon.
