The other weekend I was extremely excited because I left the grocery store with a pack of heirloom tomatoes in my reusable eco bag. My mind was buzzing with all the possibilities. Once a week we like to make a soup here at my parents house, it is economical and it feeds all of us quite easily. I made a tomato basil soup and paired this soup with some grilled cheese. My dad and hubby had ham and cheese, but I pulled out all the stops for my mom and I.
This grilled cheese sandwich features 3 different types of cheese, heirloom tomatoes, fresh basil and a delicious Italian garlic butter spread. Just the smell of these browning up on the griddle was enough to make our mouths water. The pictures really don’t do this beauty justice.
A delicious twist on the classic and easy sandwich.
- 2 slices of bread per sandwich
- cheddar cheese
- mozarella cheese
- parmesan cheese
- 1 tbsp butter
- 1/2 tsp garlic powder
- 1/4 tsp italian seasoning
- 4-6 basil leaves per sandwich
- 1 heirloom tomato per sandwich
To assemble your sandwich place a slice of cheddar cheese on a piece of bread, top with sprinkling or slices of mozzarella and grated parmesan. On top of the cheese add the tomato and then the basil.
In a small bowl add butter, garlic powder and Italian seasoning. Put into microwave for about 15 seconds until butter is melted. Use a pastry brush to brush the Italian butter on both sides of the bread.
Cook on medium low in a cast iron pan or frying pan or griddle. Once golden brown on one side it is time to flip. If it is browning too quickly lower the temperature. Sandwich is done when the cheese is melted and the bread is toasty and golden brown.
