This is a cake recipe that any chocoholic needs. One night not so long ago, during that oh so special time of the month I had the most intense craving for chocolate cake I had ever had. I was seriously wondering if I may be pregnant and this child was desperately wanting some cake. But of course it was like 9:30 at night and I was exhausted. I didn’t have any ability whatsoever to make a chocolate cake. And then it came to me, like the angel coming to Mary telling her her life was about to change drastically, I remembered: mug cakes! I have been kind of sceptical of the whole concept of cooking or baking anything in a microwave. I didn’t believe that it could come out tasting like it wasn’t a 5 minute frozen meal. Well, well, well, I was wrong and thank God Almighty that I was.
I scoured pinterest looking for a mug cake recipe to try and low and behold I stumbled across this beauty. In 10 minutes (I made 2 mug cakes, one for me and one for hubby) I had in my eager hands a mug of warm, delicious chocolate cake. Oh boy, that’s a life changer. I decided to also make a cookies and cream frosting to put on top of the cake since we didn’t have whipped cream. I used the same frosting that I used on the Cookies and Cream Cupcakes (For Two) from Dessert for Two. I feel like mug cakes are the perfect dessert for the Fall as they are cozy and warm and you can hold them close to your chest like a cup of hot tea or cider and feel it start to warm you both from the outside in to the inside out.
A delicious quick fix to a chocolate craving.
- 1/4 cup semisweet chocolate chips
- 3 tbsp milk
- 1/2 tbsp vegetable oil
- 2 tbsp flour
- 1/4 tsp baking powder
- 2 oreos crushed
- pinch of salt
- 1/8 tsp vanilla
- 2 tbsp butter softened
- 1/2 cup powdered sugar
- 1/2 tbsp milk (or cream)
- 1/4 tsp vanilla
- 2 oreos crushed
In a large microwave safe mug put in chocolate chips and milk. Heat in microwave for 30-35 seconds. Remove from microwave and stir until melted chocolate becomes smooth. Add remaining ingredients and stir until smooth.
Cook in microwave for 1 minute 10-15 seconds or until the top of the cake is set, you can also use a cake tester to be sure.
Add all of the frosting ingredients into a small bowl beat until smooth and combined (using an electric hand mixer or using a spoon).
