Pesto Penne Pasta

This recipe needed some updated photos. I made some pesto and penne pasta for my parents while I was visiting as it was something my mom could eat. This way we didn’t have to make 2 separate meals. I made a pesto sauce from a new cookbook which I will be sharing soon. This pesto pictured is not a pesto cream sauce, but you can make it one by adding cream to the pesto and then adding the pasta. Some delicious additive ideas for your pesto penne pasta are:

  • chicken
  • cherry/grape tomatoes
  • sundried tomatoes
  • mushrooms

This is one of my own recipes that I made with my homemade basil and spinach pesto. This is a simple and healthy recipe. This recipe reminds me of Christmas because of the red and green colours of the pesto and tomatoes. This recipe needs to be eaten the night of as the oil in the pesto begins to separate from the pesto which effects the consistency of the pesto cream sauce. But this sauce is so easy that you can always whip up another batch.

  • 1 recipe pesto recipe here
  • penne pasta
  • 1-2 cups of cream if wanted
  • 12 cup parmesan grated
  • 1/2 tsp salt to taste
  • 1/2 tsp pepper to taste
  • 1-2 chicken breasts
  • 1/2 tsp garlic powder seasoning
  • 1/2 tsp paprika seasoning
  • pinch salt seasoning
  • pinch pepper seasoning
  • 1 tomato diced
  1. Season chicken breasts with garlic powder, paprika, salt and pepper and grill until cooked through. Cut into strips or cubes and set aside.
  2. Cook penne according to package instructions.
  3. While penne is cooking simmer 1-2 cups of cream with the desired amount of pesto and to taste. Once the pesto and cream are well incorporated add parmesan slowly until desired flavour is reached.
  4. Toss penne with pesto parmesan cream sauce.
  5. Serve with grilled chicken and garnish with diced tomatoes and parmesan
