Breakfast Berry Pie with Oatmeal Crust

It is summer time and that means there is a multitude of fresh seasonal fruits, and it is always fun to think of new ways to eat them and serve them up. This recipe is super customizable, you can use whatever fruit is your favourite and you can choose to fill the crust with cream cheese frosting or your favourite yogurt. You can serve this pie/tart for breakfast or you can serve it for a light summer dessert. This recipe can also be a lot of fun for slumber parties, just press the crust into mini tart tins or muffin tins and let the kidlets fill the tart shells with all their favourite toppings. Breakfast Berry Pie with Oatmeal Crust

A delicious and fresh option in the summer for breakfast, brunch or dessert.

Course: Breakfast, brunch, Dessert
Ingredients
Crust
  • 1 cup oats
  • 1/3 cup flour
  • 1/3 cup brown sugar
  • 1/2 tsp salt
  • 1/3 cup cold butter
Cream Cheese Filling (Alternatively use favourite yoghurt)
  • 4 oz cream cheese softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla
Fruit
  • strawberries
  • raspberries
  • peach
Instructions
Crust
  1. Preheat oven to 375 and grease a pie plate.

  2. In a medium sized bowl combine all ingredients except the butter. Cut in the cold butter using a fork or pastry blender. Transfer crust to greased pie plate and press the crumb mixture into the pie plate to form the crust.

  3. Bake for 13-15 minutes until slightly golden brown. Allow to cool completely before filling.

Cream Cheese Filling
  1. In a small bowl beat the cream cheese until light and fluffy add the powdered sugar and vanilla and beat until smooth.

Assembly
  1. Spoon the cream cheese filling or your favourite yoghurt onto your crust to fill it. Place your favourite fruit on top of the filling. I try to make a pretty pattern by starting with one layer of fruit and then another. Have fun with it šŸ™‚
