With our big move coming up my hubby and I have been trying to empty out our freezer. We had half a pack of Costco sized chicken breast deli meat in the freezer and I decided to make cheese and chicken rolls. I have a favourite cheese bun recipe and it is absolutely delicious, and I used the dough recipe to make these rolls which you can find here. I wanted to make these rolls because on the weekend my hubby and I are planning on doing a lot of work disassembling our furniture and packing up the majority of our house. To relax after all of that hard work my hubby and I will have a picnic at our favourite lake spot, and these buns will be perfect for the job with some farmers market fruit.
These rolls are also really easy to customize to whatever flavours your family loves. You could do a simple ham and cheese or do a cordon bleu inspired roll or bbq chicken rolls. I think these are perfect for kids lunches when served alongside fruit and veggies. I love to dip mine in honey mustard. If my hubby liked tomatoes I would have added some, but that is something that you could try. My hubby was very happy to come home to this surprise.
A quick and easy roll for lunches, picnics and snacks!
- 1 cup warm water
- 2 1/4 tsp active dry yeast
- 2 tsp sugar
- 1/4 cup olive oil
- 2 tsp garlic powder
- 1-2 tsp salt
- 3 cups flour
- 12-16 slices chicken breast deli meat
- mozarella cheese grated
- cheddar cheese grated
- parmesan cheese grated
- 1/4 cup butter melted
In a measuring cup place the warm water, sugar and yeast. Allow it to sit for 10 minutes and bloom.
In the bowl of a stand mixer add the activated yeast, olive oil, salt, garlic powder and 2 cups of flour. Use the paddle attachment to combine ingredients. Once combined switch to the dough hook attachment and add the last cup of flour. Once combined and a smooth dough has formed knead for a couple moments.
Form a ball of dough and place in a greased bowl covered with a towel or plastic wrap. Allow to rise (double in size) for 1 hour in a warm place.
Once the dough has risen, punch it and roll out into a large rectangle. Leaving 1 inch of dough free around the edges sprinkle grated cheddar cheese until it is generously covered, next start the second layer by layering up the chicken deli meat, finally top with mozzarella cheese. Roll up like cinnamon buns and seal by pinching the dough together.
Cut into 16 pieces. Place nine rolls on a greased baking sheet. Brush with melted butter and sprinkle with parmesan cheese. Bake in 375 degree preheated oven for 12 minutes.
Allow to cool on tray.
