Vegetarian Burritos

I love Mexican food! I love tacos, fajitas, salsa, tortillas, churros etc. There is something about Mexican food that is a great balance of filling, comfort food and fresh flavours. My hubby and I made these burritos for a meatless Monday meal one a couple weeks ago, and I was so excited! I had some homemade pico-de-gallo in the fridge and I was so excited to use it. My hubby was a bit nervous about the refried beans, but I was really impressed that he dove in head first to try something new. After trying the refried beans he now knows for sure he doesn’t like them… something about their texture, but I love them. What I love about these burritos is that they are so easy and so customizable, that you can use whatever you have on hand.


I made my own pico-de-gallo by dicing 2 roma tomatoes and removing their innards, 1/4 of a red onion and seasoning with salt, pepper, cilantro and lime juice. This homemade pico-de-gallo is easy to make and delicious with tortilla chips,  and great on Breakfast Tacos. If you want to go the extra mile you can make some homemade flour tortillas.

Ingredients
Fillings
  • refried beans
  • corn
  • pico de gallo or salsa
  • lettuce
  • cheddar cheese
  • sour cream
  • cooked rice
  • cilantro
  • lime juice
Instructions
  1. On a large flour tortilla spread a generous helping of refried beans and top with sour cream, rice, cheese, pico de gallo, lettuce, and corn, cilantro and a squeeze of lime juice.
