Luke’s Diner Pancakes (Gilmore Girls)

Gilmore Girls is a favourite show of mine and my parents. For my birthday my mom and dad got me the Eat Like A Gilmore cookbook, and I have finally had a chance to try some recipes from it! My hubby and I have tried many pancake recipes and we have quite a few favourites. Some of the recipes we like are quite extensive, and some have special ingredients. One morning my hubby and I were craving pancakes, but wanted them to be quick, and I didn’t have some of the special ingredients I needed for another recipe, so we tried this one, and it turned out delicious!

My hubby hasn’t seen Gilmore Girls, but I remember being younger and sitting in my room with my pink portable DVD player watching Gilmore Girls. I remember the roller coaster of emotions and how it felt like my world was spinning when the show ended. A couple months ago I watched the new Gilmore Girl episodes and was actually disappointed.

I felt like the new episodes tried too hard to incorporate everything, and it felt like they were trying to hard. I was disappointed with the ending. My favourite part of the whole reboot was the growth of Emily’s character. I couldn’t help but well up as she learnt how to live without her Richard. I also of course missed the wonderful Sookie. Watching the reboot has inspired me to rewatch Gilmore Girls and share that part of my teenage years with my hubby.

Pancakes are one of my favourite foods. I love how customizable they are, and how hard they are to screw up. Pancakes are always comforting like a hug. My hubby loves to have his pancakes with chocolate chips and a sprinkling of cinnamon. I prefer mine plain, but with a generous spread of butter and drizzle of maple syrup. This recipe is really a great one when you need a quick and reliable to be delicious.

A delicious and quick recipe inspired by Gilmore Girls!

Course: Breakfast, brunch
  • 2 cups flour
  • 4 tsp baking powder
  • 1 1/2 tsp salt
  • 2 eggs
  • 2 tbsp sugar
  • 2 cups buttermilk
  • 1/3 cup milk
  • 2 tbsp butter melted
  • 1 tsp vanilla
  • chocolate chips
  1. Preheat oven to 200 and put a baking sheet in the oven. This will be used to keep the pancakes warm.

  2. In a medium sized bowl mix together the flour, baking powder and salt.

  3. In another bowl mix together the eggs, sugar and buttermilk

  4. Add the wet ingredients into the dry ingredients. Once combined add the milk. Once the milk is combined add the melted butter.

  5. Heat a skillet over medium heat and spray with non-stick spray. Use a 1/2 cup measure to pour batter onto preheated skillet. If you want sprinkle add ins on top of your pancake such as my hubby's favourite chocolate chips and cinnamon. When golden on one side flip over. Once that side is golden it is finished cooking. Add to the baking sheet in the oven to stay warm. Serve with butter and syrup or berries and whipped cream.
