Chocolate Chip Granola Bars

I love chocolate chip granola bars. These were the classic snacks that would always be in my lunch box. I’ve been wanting to make homemade granola bars for a long time now. Making granola bars homemade means I can cut out the chemicals and save money, a double WIN in my books. These are really easy, really yummy and extremely easily to customize to your favourite flavours. I found this recipe on Lauren’s Latest here.  I think these are a great snack. I bring these granola bars to work and eat one on my first 15 minute break and it would be enough to fill me up until my lunch break.

I started my new job a couple weeks ago, and I’m so happy to say I love it! It is a lot of work, and I come home pretty exhausted, but it is a good kind of tired. I come home happy and proud of the work I have been able to do. I’ve been learning my different tasks pretty quickly, and have met a lot of different wonderful people. My job is different every day I clock in, and I love it.

Chocolate Chip Granola Bars

An easy, delicious and healthier version of the classic lunch box snack.

Ingredients
  • 1/4 cup butter
  • 1/4 cup honey
  • 1/3 cup brown sugar
  • 2 cups oats (quick cooking)
  • 1 cup rice cereal
  • 1/2 tsp vanilla
  • 2 tbsp chocolate chips
Instructions
  1. Spray a small jelly roll pan with non-stick spray.

  2. In a bowl mix together oats and rice cereal.

  3. In a pot combine butter, honey and brown sugar. Heat until it comes to a boil and then reduce the heat and cook for 2 minutes. Remove from the heat and add the vanilla.

  4. Pour mixture over the oats and rice cereal and combine until it is all generously covered. Wait to add chocolate chips otherwise the heat of the mixture will melt the chocolate.

  5. Pour the oat mixture into the greased pan. Press the mixture into about half of the pan so that the granola bars are thick enough. Press tightly together so that the granola bars stick together. Lastly press the chocolate chips into the granola bars.

  6. Allow the granola bars to harden at room temperature for 2 hours. Wrap in plastic wrap or parchment paper. Store in an air tight container. Do not store in the fridge or the granola bars will harden too much.

  7. ENJOY!
