Chicken schnitzel is a delicious and comforting dinner. It is a perfect date night meal. Chicken schnitzel is perfectly paired with the classic sides like mashed potatoes, gravy and steamed veggies. The chicken schnitzel is also perfect to use as the body of any hefty chicken sandwich or burger! I was inspired to make this recipe when I had some homemade breadcrumbs to use up. I had some stale bread leftover from making these French Toast Muffins (2nd Breakfast Muffins), and decided to make up some breadcrumbs with the leftover bread.
I used my food processor to blitz up the bread and added garlic powder, Italian seasonings and parmesan. The breadcrumbs were a great success, and I am convinced they are one of the reasons that these chicken schnitzels turned out so delicious. I found the recipe here. This meal is so comforting, and reminds me of those classic chicken dinners you have as a kid.
A delicious and comforting chicken dinner!
- 1 chicken breast per person
- 1-2 cups breadcrumbs (homemade or store bought)
- 1/4 cup parmesan
- 1 tsp garlic powder
- 1/2 tsp dried parsley
- 2 eggs
Season breadcrumbs with garlic powder, dried parsley, and parmesan cheese.
Whisk together the eggs and pour them into a pie plate.
Pound chicken breasts so they are about 1/4 inch thick.
In a skillet, heat olive oil over medium heat. Dip the chicken breasts in eggs and then generously dredge in breadcrumbs. Place in the skillet.
Cook until golden brown on each side (about 3-6 minutes per side). Chicken is finished when it is golden brown and cooked through.
Serve along side garlic mashed potatoes, steamed vegetables and gravy!
