Bailey’s Irish Rice Pudding

What do you do when you have leftover rice? My two uses are usually rice pudding or fried rice. I had leftover rice in the fridge as a part of my BRATS (bananas, rice, applesauce, toast and soup) diet after not feeling well the past week. I used most of it to make some fried rice, and I used the remaining rice to make some Irish rice pudding. I love this rice pudding recipe. You can find the link to the original recipe on the original rice pudding post which you can find here. I love this recipe. It is always perfect for a quick and easy dessert. The Bailey’s goes extremely well with the cinnamon and vanilla in this pudding. It is truly delicious. If you want an extra kick you can drizzle some Bailey’s on top of the pudding. This is a simple St. Patrick’s Day dessert if you don’t have time to make some Guinness Chocolate Cake or Green Velvet Cupcakes. If you wanted to give this an extra St. Patty’s twist you could add a bit of green food colouring.

 

Bailey's Irish Rice Pudding

A delicious and Irish twist on a classic and easy dessert!

Course: Dessert, St.Patrick's Day
Ingredients
  • 2 cups of cooked rice
  • 2 cups of milk
  • 1/3 cup sugar
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 3 tbsp of butter
  • 1 tbsp . Bailey's (plus more for drizzling)
Instructions
  1. Put all of the ingredients into a pot and bring it to a slow boil over low to medium heat.
  2. Continuously stir the pudding to prevent burning.
  3. Cook until the pudding has reached desired consistency.
  4. ENJOY!
