Chicken Alfredo Lasagne Roll Ups

IMG_0615I was inspired by an very easy recipe that I somehow decided to make it more difficult for myself.. (sigh). I used the recipe found here. It is a really easy recipe to follow and she has great tips on how to keep this a quick easy week night meal. I of course did not heed her advice. Instead of using a rotisserie chicken to save time I seasoned and cooked my own chicken breast… luckily my husband was very patient and helped me so it didn’t take terribly long. This recipe is absolutely delicious and extremely filling. Both my hubby and I could only manage to eat one roll up for dinner! But that just meant more delicious leftovers for lunch. My sister and her best friend also enjoyed our leftovers…in fact there were none “leftover” by the time they had gone home. I will definitely be making this again.

  • 12 lasagna noodles (1 would recommend cooking a couple extra in case some rip)
  • 2 cups alfredo sauce
  • 15 oz ricotta cheese
  • 1 egg
  • ½ cup parmesan cheese
  • 2 cups shredded mozzarella cheese, divided
  • 1 TBS italian seasoning
  • 1 tsp garlic powder
  • ¼ tsp pepper
  • ½ tsp salt
  • 2 cups shredded cooked chicken (rotisserie chicken works great)

  1. Preheat your oven to 350 degrees.
  2. Cook your lasagna noodles according to package directions.
  3. Spread 1 cup of you alfredo sauce on the bottom of a 9×13 inch pan.
  4. Mix together your egg and your ricotta in a medium sized bowl. Mix in your parmesan and 1 cup of your mozzarella cheese.
  5. Add in your italian seasoning, garlic powder, pepper, and salt.
  6. Add in your shredded chicken and mix everything together.
  7. Put ¼ cup of the cheese chicken mixture on each lasagna noodle and roll up lasagna noodle. Put roll up into your prepared pan. Repeat with additional mixture and noodles.
  8. Spread remaining alfredo sauce over the top of your roll ups. Top with additional mozzarella cheese.
  9. Bake in oven for 15 minutes.
